Jello Roll Ups

Here's another no bake recipe that the kids will love!

Jello Roll Ups

1 ( 3 ounce) package jello (any flavor)
1/2 cup water
1 1/2 cups mini marshmallows or 12 regular marshmallows

In a microwave safe bowl, add water to jello and microwave for 1 1/2 minutes.  Stir to dissolve jello.
Add marshmallows and stir until marshmallows are melted.  You may need to return it to the microwave.  A creamy layer will float to the top.
Pour mixture into a 9 x 9 pan that has been sprayed with cooking spray.  Chill 45 minutes.  When set, run a knife around edges and roll up.  With seam side down, cut roll into slices. (Approximately 10) Serve immediately or chill until ready to serve.
I think the next time I make these, I will make a box of every color and serve them to look like a rainbow!  Until next time . . . . .

Beer Bread

Okay, maybe this isn't a sweet, but I thought it deserved some recognition.   Forget those fancy, expensive boxed mixes.   Try this quick, easy, and delicious recipe.

Beer Bread

3 cups self rising flour 
1/3 cup sugar
12 ounces beer
5 Tablespoons butter, melted

Gently mix the flour, sugar and beer until combined. ( It is very important not to over mix!)  Pour batter into a greased loaf pan and bake at 350 degrees for 45 minutes.  Pour the melted butter on top and bake 10 minutes more.   So simple and sooooooo delicious!!

*Notes
Different beers will produce different flavors.  It's fun to experiment!
There are so many variations.  By adding different herbs and spices, the possibilities are endless!

The bread pictured below was made using regular old Bud Light.  I also added 2 Tablespoons of fresh chives and 1/2 cup shredded cheddar cheese.




I love to serve this bread the "Tastefully Simple" way.  Cut into small cubes and served with the dip of your choice.

Red, White and Blue Berry Trifle

I know, this post is a little late, but I've been pretty busy with the kids being out of school now and baseball in full force!

Even though I did get a new oven, (finally!!!!!) this recipe is no bake.  The original recipe appeared in the July issue of  Everyday Food and I modified it ever so slightly.  I made it for a 4th of July picnic and was happy with the results.

Red, White, and Blue Berry Trifle

5 cups raspberries
3/4 cup confectioner's sugar
1/4 cup orange juice
1 (8 oz) block cream cheese, softened
1 1/4 cups cold heavy cream
1/2 teaspoon vanilla extract
20 - 24 ladyfingers broken into 1 inch pieces
2 1/2 cups blueberries

In a medium bowl, combine raspberries with 1/4 cup confectioner's sugar and orange juice.  With the back of a fork, lightly mash berries to release their juices and let sit 10 minutes.
Meanwhile, mix cream cheese and remaining confectioner's sugar until smooth.  Whisk in cream and vanilla until soft peaks form, about 4 minutes.
Place half he ladyfingers in the bottom of a trifle bowl and top with half of the raspberry mixture.
With a small spatula, spread half of the whipped cream over berries.
Repeat with remaining ladyfingers, raspberry mixture, and whipped cream.  Top with blueberries.
Cover and refrigerate 3 hours or up to 3 days.
