Pumpkin Blondies
2 cups flour
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
3/4 teaspoon salt
1 cup (2 sticks) softened butter
1/2 cup sugar
3/4 cup brown sugar
1 egg
2 tsp. vanilla
1 cup pumpkin
1 cup white chocolate chips
Mix dry ingredients in a bowl and set aside.
Beat butter and sugars until creamy. Add egg, vanilla, pumpkin and continue to beat. Add dry ingredients and continue to beat. Fold in chips.
Pour batter into a greased 9 x 13 pan and bake for 40 minutes. When cool, cut into 24 bars.
